Delicious Mediterranean is focused on teaching you how to cook – fresh, simple, and Fast (whenever possible, sometimes it’s not) Eastern Meditteranean recipes. The food of the Mediterranean has so many beautiful regions to explore and foods so profoundly steeped in culture and history, it’s easy to be inspired by the cuisine of this magnificent region.
Most people tend to think of France, Italy, Greece, Israel, and Spain when hearing Mediterranean food, but often forgetting, Lebanon, Jordan, Palestine, Syria, Turkey, Egypt, Libya, Tunisia, Alegria and Morrocco are also a part the Mediterranean, but often referred to the Middle East or the Eastern Mediterranean. I tend to focus on dishes from these regions because their recipes don’t usually include wine and pork, but still follow the principals of Mediterranean cooking and living.
My intention is to guide you through an exploration of these cuisines and how you can live like the people of the Eastern Mediterranean.
Why explore the Eastern Mediterranean? because we want to inspire you with bowls of delicately steamed couscous topped with tender meats, vegetables and cinnamon-spiced onions to rich tagines filled with ruby red sauces coating little savoury balls of kaftas and topped with eggs that have yolk as golden as the sunset. Savoury, fruity, soul comforting stews and sensational seafood. Perfect pilav with beautiful warming spices of the Orient, intoxicating smells that pleasantly embrace you as you open the lid, only to be greeted by juicy meats, dried fruits and toasted nuts. That the eastern side of the Mediterranean we want to invite you to explore.
