    Chia pudding is the easiest healthy breakfast or midday snack you can make. All you have to do is stir the chia seed together with milk and store it for 30 minutes, and you've got a delicious batch of chia pudding to top with your heart's delight! These Layered Chia Pudding Parfaits will take your chia pudding-making game to a whole new level.

    How to make Chia pudding

    1. Mix together the chia, honey, & milk together.
    2. Let the pudding rest for 10-15 minutes.
    3. Restir to avoid clumpy pudding and chill for at least 30 minutes.
    4. Top with your choosen fruit topping.

    Fruit Topping options

    I prefer to use thawed frozen fruit for the pureed fruit topping and then topped with fresh fruit before serving. This recipe also can be made by using only fresh fruit the choice is yours.

    • Stawberry & Kiwi: The classic sweet tart flavour blend of stawberries & kiwis with a little extra sweet creaminess from banana and honey. You can swap the banana for ½ an avocado and 2 dates instead of the honey.
    • Cherry & Blueberries: Talk about a blast of deliciousiness packed full of antioxidants! This mixture with a touch of sweetner is my favourite of the bunch, but don't try to skip the sweetener cause the puree isn't very sweet even with the banana.
    • Mango & Pineapple: This tropical inspire pudding is the prefect afternoon snack! Use coconut milk for your milk option and shredded coconut for a topping. I like to make this with 100% thawed frozen fruit to keep the cost low and flavour is always the best!

    Tips for making the best Chia Pudding

    Clump-free Chia. Make sure you stir the chia pudding 10 to 15 minutes after letting it rest.

    Don't skip the sweetener. Even though you're using lots of fruit when making these, you may be tempted to skip using any sweetener; however, I strongly recommend adding some honey or maple syrup to the pudding—even the smoothie topping benefits from the additional sweetener.

    Make a big batch. Mixing one chia pudding is just as tedious as making 4 or 6 servings. You can make a big batch and enjoy it all week or freeze the chia pudding in a glass jar and thaw in the fridge the night before, then top with fruit in the morning and enjoy a quick delicious breakfast or snack.

    Don't overfill the jar. I totally over-filled these jars, just for the pretty pictures. (food photographers tricks 😏) However, I had to empty the pudding into a different bowl, or my hand would've been covered in fruit and chia seed, and I wasn't able to freeze for later.

    What is the ratio for a perfect chia pudding?

    The ratio is 1:4. One tablespoon of chia seeds will need four tablespoons of liquid of your choice.

    What do chia seeds taste like?

    Chia seeds don't have any taste. They have a jelly-like texture and take on the flavours you add to them.

    How do you freeze chia pudding?

    Freezing the chia pudding in single portions so it’s easier to grab as needed. Chia pudding can be frozen for up to 3 months. Thaw in the fridge until softened before eating, for 4-6 hours or overnight.

    Where can you find Chia seed?

    You can find chia seeds in most major grocery stores now, usually located next to the cereal section or the health food section.

    Ingredients
      

    Chia Pudding Base Recipe (2 serving)

    • 4 tablespoons Chia seeds
    • 1 cup Milk (of your choice)
    • 2 teaspoon honey (or sweetener of your choice)
    • ½ teaspoon Vanilla (optional)

    Strawberry & Kiwi Chia Parfait (2 servings)

    • ¼ cup strawberries (thawed if frozen)
    • ¼ cup fresh kiwi
    • ½ banana (thawed if frozen)
    • 1 teaspoon honey

    Blueberry & Cherry Chai Parfait (2 servings)

    • ¼ cup blueberries (thawed if frozen)
    • ¼ cup cherries (thawed if frozen)
    • ½ banana (thawed if frozen)
    • 1 teaspoon honey

    Mango & Pineapple Chia Parfait (2 servings)

    • ¼ cup mango (thawed if frozen)
    • ¼ cup pineapple (thawed if frozen)
    • ½ banana (thawed if frozen)
    • 1 teaspoon coconut flakes

    Instructions
     

    • Prepare the chia pudding. You have two different ways to go about making this chia pudding. The first way is to add all of the chia ingredients into a bowl⏤Mix & allow the seeds to SET for 10 minutes. Then STIR the chia pudding again to remove any lumps⏤Chill in the fridge for at least 30 minutes. The second way is to divide the chia ingredient in half and add each half into a 500ml (16oz) jar. Then SET, STIR, & CHILL.
    • Make your fruit topping. Once your chia pudding has been set, then it's time to top it! If you made the batch of chia pudding in one bowl, then divide the pudding. Choose ONE of the fruit toppings: Add all of the ingredients into a blender and puree. Divide the pureed fruit topping between the jars of chia pudding. At this point, you can cover and store the pudding for 3-5 days in the fridge.
    • Top with additional fresh or frozen fruit. This is an additional step, and it's 100% optional. You don't have to use the same fruit you used on the topping; you can also completely skip the additional fruit and just add some granola or nuts.
