Boursin Mashed Potatoes

Boursin Mashed Potatoes are the easiest, creamiest, perfect elevated-yet-homey potato side dish to adorn your table this holiday season. Yukon gold potatoes are mashed with butter, milk & Boursin cheese until perfectly creamy with an intense infusion of roasted garlic & herb flavour, thanks to the Boursin cheese.

Ingredients
  

  • 4 lbs potatoes
  • 1 chicken bouillon cube
  • cup butter
  • 1 cup milk
  • 1 pkg Boursin cheese
  • salt, as needed
  • 1 Tbsp parsley (optional) finely chopped

Instructions
 

  • Peel and cut potatoes into 2-inch pieces. Place the potatoes into a large pot and cover with cold water, then add the bouillon cube.
  • Bring the potatoes to a gentle rolling boil and allow the potatoes to cook uncovered for 15 minutes or until fork-tender.
  • Once the potatoes are tender, drain and place back into the pot. Add butter and Boursin cheese. Begin mashing the potatoes, then slowly pour in a bit of the milk while using a potato masher to reach desired consistency. (you may not need all of the milk)
  • Adjust the seasoning (A.K.A. the salt & pepper taste test) and Serve in your favourite serving bowl. A sprinkle of parsley makes for a beautiful presentation, but it's optional.
