Baked Berry Oats

Baked Berry Oatmeal is a delicious and easy way to feed a crowd or for meal prep. Made with a handful of healthy pantry ingredients, all whip up in one bowl. Naturally Gluten-Free, Sugar-free, Dairy-Free, & highly adaptable!

Ingredients
  

  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon ground
  • ½ teaspoon salt
  • 2 tablespoon flaxseed ground
  • 2 cup mixed berries fresh or frozen
  • ½ cup Nuts & Seeds

Wet Ingredients

  • 2 cups milk of your choice
  • ¼ cup maple syrup
  • 1 teaspoon vanilla
  • 1 tablespoon ghee
  • 1 banana overripe, mashed

Instructions
 

  • Preheat the oven to 375° F. Grease an 8×11 inch baking dish.
  • In a large mixing bowl, mashed banana, then add the milk, flaxseed, ghee, vanilla extract and maple syrup, mix all of the wet, until smooth.
  • Toss the oats, cinnamon, baking powder, salt and berries in the wet mixture. Stir until all the oats are covered in the wet mixture.
  • Pour the oat mixture into your prepared baking dish, then sprinkle the nuts and seeds on top of the oatmeal.
  • Bake uncovered in the preheated oven until the top of the oatmeal is golden, and the mixture is set⏤for about 35 minutes. Remove and allow it to cool for 5 minutes.
  • Serve with your favourite topping, and of course, an extra drizzle of maple syrup is always welcomed.

Notes

For an extraordinary toping option, try: 
Mix the ½ cup of nut & seed mixture with 1 teaspoon melted butter and 1 tablespoon of maple syrup. Then sprinkle the sticky nut mixture on top of the oat mixture before place in the oven for an extra sweet, crunchy topping.
