I’m so glad you loved the recipe, and the adaptions worked for you. I recommend the Mina Harissa due to its availability in American supermarkets; many of the brands I love aren’t easily accessible for most people.

I added olives, and my fish is flounder, as I couldn’t get cod (and the flounder was on sale, woot!). I wish I had checked your blog while I was still at the store. I didn’t expect them to have the same brand harissa (I didn’t think they’d have harissa at all), and I bought the mild. Should have got the spicy, for sure! But it’ll be yummy anyway. (I fell in love with harissa when Trader Joe’s used to sell sardines in harissa. We don’t have a TJ’s near us, so I only got it once! Awesome on the much-made-fun-of avocado toast.) It’s always super delicious and looks exactly like yours. One tip I can suggest when making enough to have leftovers is that I insert a funnel-shaped flour sieve in the soup, cook the pasta in it and when ready I just pull it out and leave it to drip. That way if any soup is kept for the next day, the already cooked pasta can be added to the soup just for warming up.

Hi Zaharah,
Sahlab is very healthy, and so is milk if you can consume it without digestive issues. If you can’t digest milk or just don’t like milk, then you can use a plant-based milk option. Please don’t use mix sahlab with water; it doesn’t taste pleasant!
Has for the sugar, it’s often added to the sahlab mix for two reasons: the sahlab powder is actually a dried orchid root and doesn’t have the best taste without a bit of sugar. The second reason is it’s expensive to obtain real sahlab due to the overexploitation of wild orchids in Turkey and Iran.
Traditionally Sahlab was used as a medicine during the Ottoman times. And it was given to young brides a few weeks before the wedding for weight gain because a chubby bride was preferred over a thin one; body fat on a woman was a sign of wealth, health, and fertility. So when drinking sahlab keep this in mind drinking too much sahlab too often can cause weight gain.

I did not have a tajine so used a dutch oven, which seemed to work well…though I can’t compare…and it was soooo good. I made this twice – once as written (delicious), and the second time ’round tinkered just slightly since I wanted a bit more kick, so added onion, a couple of tsps of Ras el Hanout, a bit of parsley and cilantro and few TBSPs of chopped prune & apricot (not sure if traditional but have added them to my stove-top morrocan-style stew over the years)
Really looking forward to leftovers tonight!
